Bistro Style Panini

I make a lot of homemade breads and I always use my bread machine...Always!!

These turned out very, very well, except they could of been a little browner.

The dough in the bread machine

I only made 1/2 batch so I only got four rolls
Here are the rolls after they were risen and before baking. I did forget to score them and put flour on the top.
I made Hubs a Salad and a roll for lunch
Even though this was cut crooked, look at the holes in the bread....perfect.
Here is Hubs dinner, a Buffalo Chicken Sandwich . Kind of sloppy but very good.

Bistro Style Panini
Sponge

1 Cup Warm Water
1 Tablespoon Yeast
1 Cup Flour

Combine all ingredients in a medium size bowl.

Stir to a gloppy pudding like mixture

Let sponge rise 1-3 Hours

When the sponge is all bubbly, it will be ready to make the dough....I add everything to a bread machine and set on dough cycle.



Dough

2 Tablespoons Olive oil
1/2 Cup warm water
2 teaspoons sugar
1 1/2 teaspoons salt
3-4 Cups flour
3 Tablespoons Cornmeal
Add Entire sponge mixture

Set bread machine on dough cycle, when it is finished

Dust large cookie sheet with cornmeal (not the cornmeal above)

Shape dough into rolls and let rise 30 minutes or until doubled in size

After dough has risen, scoe tops of rolls with a sharp knife and dust top of roll with flour.

Bake 375 degrees for 20 - 25 minutes. I think I needed to set my oven higher to get them browner....either that or my oven is not working right because I noticed I had trouble getting the cookies to brown also.
