Cream Cheese Stuffed Jalapeno Poppers Wrapped in Bacon

I was going to suprise Hubs with Jalapeno Poppers but he always has his nose in my kitchen so I put him to work cleaning out the peppers for me.

These are great because I can make them ahead of time and keep them in the fridg. until I am ready to bake them.

Cut the stem end off the pepper and take all the seeds out. Stuff with cream cheese, then wrap in a slice of bacon.
Be sure to cover the top of the pepper so the cream cheese will stay in

Then keep wrapping the bacon around the pepper and secure with a toothpick



I put these in a lined muffin tin to keep the cream cheese in...but I think it kept them from browning nicely.


Place in a 450 degree, preheated oven. The recipes says for 10 minutes but I left mine in for 20 minutes and I still would of liked them browner.


See what I mean, although the bacon was cooked, it was just not brown enough. Hubs loved these....brown or not. He said they were fantastic. I guess that means I will be making these again.
